Meals?

Anyone have some thoughts on how to make meals that won't heat the house, take much prep time and will be good reheated or not? Seems like my biggest stumbling blocks for the moment are food related. I need to eat out less and enjoy what I do make more. I also seem to be feeding kids-out-of-the-house and their friends more often. Still not much, but I'd like to have some reasonable choices prepared that would only need a quick heating.

    Weirdly enough, I find I use my crock pot more in the summer. Crockpot chili is good and flexible - chili one day, taco filling another, nachos, burrito ...you get the idea.

    I make gazpacho, grinding whatever fresh vegetables and fruit (pcs of mango and pineapple give it an interesting mystery) is in season plus fresh tomato and add a can of tomato sauce (sauce, not paste) to make it red. Put it in a pitcher in the fridge, serve it with good bread, or if its chunky, salsa chips.

    Do you grill at all? We grill all year round, but especially in the summer. It keeps the heat outside, there's less mess in the kitchen, and it can be healthy. Sorry this doesn't really help you with the leftovers/travel food, though.

    I use the crock pot too and sometimes the bread machine. The Fly lady has a great recipe on her site for bean Kale soup. Its pretty cheap and DH LOVES it.
